Sean Paul
With culinary experience spanning continents from Africa to Antarctica, Sean Paul currently serves as the Head Chef at Freedom Restaurant & Sushi Bar. Sean first began his career in the restaurant world at age 14, initially working as a waiter, bartender and restaurant manager in South Africa, before finding his passion in the kitchen. Sean’s experience as a chef spans yachts, private residences and award-winning safari lodges, hotels and resorts, such as Richard Branson’s Mosquito and Necker Private Islands (British Virgin Islands) and five Singita Safari Lodges in Africa.
Sean brings influence from his travels and past roles to his cooking, with a vibrant fusion of North African, Mediterranean, Caribbean and Middle Eastern influences, always emphasizing fresh, local ingredients. Sean’s culinary philosophy is based in the ability to transport someone to a specific time, place or evoke certain memories through his dishes.
