Cocktail Recipes for Summer

You can bring those sunshine days and a taste of The Cove home with these two summer recipes—one spirited, one alcohol-free.
The Queens Drive 110

A lively island cocktail with a refreshing finish, The Queen’s Drive 110 brings together bright spirits, melon liqueur and crisp club soda.

Ingredients

  • ½ oz gin
  • ½ oz tequila
  • ½ oz white rum
  • ½ oz vodka
  • ½ oz melon liqueur
  • ½ oz lime juice
  • Fever-Tree club soda, to top
  • Cubed ice
  • Crushed ice
  • Fresh green apple, for garnish
  • Cherry, for garnish

Method

Fill a highball glass with cubed ice. Add the gin, tequila, white rum, vodka, melon liqueur and lime juice. Add a scoop of crushed ice, then top with Fever-Tree club soda. Garnish with fresh green apple and a cherry.

Hibiscus Spritz

Bright, tropical and lightly floral, the Hibiscus Spritz is made for long summer afternoons by the water.

Ingredients

  • 1 oz hibiscus syrup
  • 3 oz pineapple juice
  • ½ oz guava purée
  • ½ oz agave syrup
  • Crushed ice
  • Dried hibiscus, for garnish
  • Dehydrated pineapple, for garnish

Method

Fill a highball glass with crushed ice. Pour in the hibiscus syrup, followed by the pineapple juice, guava purée and agave syrup. Stir gently to combine. Garnish with dried hibiscus and a slice of dehydrated pineapple.
